Cistercian monks, who through clearing and reclaiming activities began to exploit the territory east of the Emilia Road, probably invented the “King of Cheeses”. To produce Parmigiano Reggiano cheese a consistent daily amount of milk is needed, which in the first centuries after the tenth century, could only be available in a Benedictine or Cistercian monastery. The monks had the apothecary notions required for the processing and transformation of milk into grana (hard) cheese but also the salt wells, of which this area was and still is rich, without which Parmigiano Reggiano cheese would perhaps never have been invented.

During the tour you will learn the secrets of this unique cheese, which is still today produced as hundreds of years ago completely without preservatives and additives: from the diet of dairy cows to the milk collection and preservation, ending with the details of the process. You will be able to watch the cheese master’s experienced hands during the cooking and his deft movements during the lifting of the cheese out of the cauldron and after that … the resting, salting and ageing rooms, with their overwhelming aromas! The visit will end with a pleasant tasting, a real pleasure for the senses!
